Brown Rice Salad

Preparation Time: 25 minutes Cooking Time: 20 minutes Ingredients1.  1 Cup Brown Rice2.  1 tblsp Olive Oil3.  1 tblsp Coco Earth Coconut Amino Sauce4.   2 cloves of Garlic (crushed)5.   2 tblsp of Currants6.   2 tblsp of Pepitas (pumpkin seeds)7.   ½  finely chopped Red Onion8.   1 cup of chopped CapsicumMethod1.   Cook rice until just tender and allow to cool2.   Cut up capsicum and onions and add to rice3.   Mix in Currants and Pepitas4.   Mix Oil, Garlic and Coconut Amino sauce and stir inServes 2-3 people

Ingredients 4 red apples 4-6 stalks of celery 125gms raisins or sultanas 1/3 cup lemon juice 50 gms walnuts, coarsely chopped 1/2 cup Moredough low salt mayonnaise Preparation: Dice apples and mix with lemon juice straightaway to stop them going brown Slice celery into similar sized pieces as apple Mix all of the ingredients together and serve Serves 4-6Recipe reprinted with permission from The Dizzy Chef, Menieres Support Group of Victoria / Whirled Foundation
