Ingredients 
Serves: 4 

  • 250gm unsalted butter
  • 1/2 cup caster sugar
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 2 1/2 cups plain flour
  • 1 teaspoon potassium bicarbonate
  • 1 1/2 cups unsalted peanuts
Directions

  1. Cream butter and sugars
  2. Add eggs and beat again
  3. Add vanilla essence
  4. Add all of the remainder of the ingredients and mix thoroughly
  5. Using a dessert spoon, spoon mixture onto greased baking trays or baking trays lined with baking paper. With back of spoon flatten each biscuit a little
  6. Bake for 15 minutes or until light brown in an set at 190 degrees Celsius (or 170 degrees fan forced)
