- 250gm unsalted butter
- 1/2 cup caster sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla essence
- 2 eggs
- 2 1/2 cups plain flour
- 1 teaspoon potassium bicarbonate
- 1 1/2 cups unsalted peanuts

- Cream butter and sugars
- Add eggs and beat again
- Add vanilla essence
- Add all of the remainder of the ingredients and mix thoroughly
- Using a dessert spoon, spoon mixture onto greased baking trays or baking trays lined with baking paper. With back of spoon flatten each biscuit a little
- Bake for 15 minutes or until light brown in an set at 190 degrees Celsius (or 170 degrees fan forced)
