Jacket Potato and Baked Beans

Preparation Time 5 minutes

Cooking Time 1 hour

Ingredients
       1. 2 largish potatoes
       2. A 400g tin of baked beans  - low sodium
       3. Grated Salt Skip cheese
       4. Side salad of your choice
Method
  1. Preheat the oven to 350°F or 180°C and bake the potatoes, wrapped in foil, for about an hour. Test they are tender with a skewer. Alternatively, wrap potatoes in cling wrap and cook on high in a microwave for about 5 minutes until tender.
  2. When potatoes are nearly ready, heat the tinned baked beans.
  3. When cooked, place the potatoes on serving dishes.
  4. Cut the cooked potatoes into quarters without cutting all the way through. Squeeze the outside of each quarter to scrunch up the flesh of the potatoes.
  5. Spoon heated baked beans over the potatoes and sprinkle with grated low salt cheese.cheddar.
  6. Sprinkle with pepper to taste and serve with a small side salad
  7. Enjoy!
