Mini Carrot and Nutmeg Egg Bites

Total Time: 35 minutes
 
Ingredients
  1.  2 Tbspns of the Spice Trading Company's Dreamy Carrot & Nutmeg Spice mix
  2.  1 onion
  3.  1 medium zucchini
  4.  1 small tin of canned corn kernels
  5.  30 g of olive oil
  6.  6 eggs
  7.  4 tbspns plain flour
  8. 1/4 teaspn Salt Skip baking powder
  9.  200g grated Salt Skip Cheese
Instructions
  1. Finely chop or process onion and zucchini and combine with olive oil
  2. Add in eggs, flour, baking powder, Dreamy Carrot & Nutmeg Spice Mix, grated cheese.and drained sweet corn
  3. Mix thoroughly
  4. Pour mixture into a greased muffin tin
  5. Cook in a preheated oven at 220° celsius (or 200° celsius fan forced) for 15 mins or until nicely golden on top.
  6. Leave to cool slightly and then serve with a salad or soup, or just enjoy them on their own.
