Can't Believe it's Not Mayo Recipe from The Sodium Girl

1.   1/2 package of Silken Tofu (about 1/2 cup)
2.   1 clove of garlic, finely diced, or 1/8 teaspoon ground garlic powder
3.   1 teaspoon of apple cider or white vinegar

Combine all ingredients and blend until smooth and creamy.
You can add whatever you like for extra flavour - curry, pickles, herbs, horseradish, paprika or wasabi. Slap it on your corn, your burger or on chips. Make an aioli or devilled eggs.
Will keep for approximately 2 weeks in the refrigerator.
