Perky Pumpkin and Chilli Soup

  1. 1 sachet Perky Pumpkin & Chilli spice mix
  2. 1 brown onion - finely chopped
  3. 20g unsalted butter
  4. 500g pumpkin peeled cut into small pieces
  5. 1 carrot cut into small pieces
  6. 500g water, adjust to taste
  7. 1tbsp vegetable stock
  8. 30g thickened cream
  9. 2 pinches black pepper, to taste
  10. Fresh basil leaves, to garnish
  1. Saute onion in the butter until translucent, about 3 minutes
  2. Add pumpkin, carrot, Perky Pumpkin & Chilli spice mix, water and vegetable stock and cook until vegetables are tender, about 20 minutes
  3. Remove from heat and blend until smooth and creamy.
  4. Add cream (if using) and blend again
  5. Season to taste with pepper, then garnish with basil and serve hot.
