Attitude is the ultimate salad dressing or sauce. Great on salads. Excellent with with fish or chicken, or poured over steamed rice or baked potatoes. It has a wonderful creamy texture. The product is GMO free, gluten free and contains no artificial flavours or preservatives. It's made in South Australia in the beautiful Adelaide Hills.

Chopped onions simmered slowly with balsamic and brown vinegars and Bundaberg brown sugar to form a thick, sweet, dark brown caramelised creation. Perky Pumpkin and Chilli Soup

Preparation Time 10 min
Cooking Time 20 min
Total Time 30 min



Ingredients
  1. 1 sachet Perky Pumpkin & Chilli spice mix
  2. 1 brown onion - finely chopped
  3. 20g unsalted butter
  4. 500g pumpkin peeled cut into small pieces
  5. 1 carrot cut into small pieces
  6. 500g water, adjust to taste
  7. 1tbsp vegetable stock
  8. 30g thickened cream
  9. 2 pinches black pepper, to taste
  10. Fresh basil leaves, to garnish
Instructions
  1. Saute onion in the butter until translucent, about 3 minutes
  2. Add pumpkin, carrot, Perky Pumpkin & Chilli spice mix, water and vegetable stock and cook until vegetables are tender, about 20 minutes
  3. Remove from heat and blend until smooth and creamy.
  4. Add cream (if using) and blend again
  5. Season to taste with pepper, then garnish with basil and serve hot.
